I'm with Giggles on the noodle front, dried egg noodles can stay stuck together if you don't poke them about enough, which is easy to do given they're only in for a few minutes. A drop of sesame oil in the water works a treat, I guess you could use any oil but sesame tastes good if you aren't rinsing them afterwards.

In other food news I made a first attempt at making cannoli the other day. The pastry wasn't quite right and I could have lived without accidentally dipping the tip of my finger into 180 degrees of oil but all in all not unhappy with them as a first attempt.

Seguing from the discussion on tofu in what was probably the politics thread I had a tofu ramen for lunch today that was so bad I feel ill having eaten it.

I know I brought it on myself [vegetable taste like sad] but this had rocket and cherry tomatoes in it ffs! Easily one of the worst things I have ever eaten.

More of a texture than a flavour [although it can be flavoured]. There are loads of different ways you can have it, most of which are alright enough, some are very good [fried/crispy/salt and chilli] and some of which are terrible, cf in ramen from this place (https://www.theguardian.com/food/2019/jun/23/octopus-guernsey-clumsy-service-detracts-from-fine-seafood-restaurant-review)

It's a protein to carry other flavours, it tastes like nothing. There are different types with different textures, but the flavour is always nothing. You can buy ones that are premarinated but the tofu itself still never has a flavour of its own.

Did Gousto this week and one of the recipes was pad Thai. But they had no peanuts and substituted them with something called nigella seeds, so had to go the shop anyway to get peanuts. Waste of time.

I never bother marinating tofu. Remove as much liquid as you can, bit of seasoning with sea salt, maybe some garlic powder, nooch, whatever.

It doesn't need to have a strong flavour. Stick it in pretty much anything Asian and it's a match made in heaven.

Mapo Tofu is the obvious one. Mapo Chicken would be shit.

My mate owed me £20 I'd forgotten about so paying £15 (£5*2 plus postage) for two big tubes of blood/fat felt like a sensible investment. They are class. Did em in the air fryer and they came out really good. Agree with Lewis that it'll be painful to go back to the supermarket muck (especially the ubiquitous Bury black pudding company). Prob getting a bit carried away with the air fryer and will probably fry the rest like a normal person.

Made FRIED CHICKEN and WAFFLES for breakfast today, with lots of maple syrup, like a proper Yankee Doodle Dickhead. Well, a facsimile of one as the waffles were made without a waffle maker (and I don't mean some 40-something sket from Dundee) and the fried chicken was done in the air fryer, but was pretty good. Shit photos to come later, maybe.

Yeah the proper stuff is. My local chippers recently got the oven thing for it and it was 15 grand.

I’ve never thought of a pressure cooker experiment but I can’t imagine it going well.

Paddle, last time I did it in the bottom bit with the paddle removed which as you say is basically just doing it in an oven but it was okay, and this time I did it in the top bit which just rotates without an actual paddle pushing the stuff around.

Obviously it isn't as good as frying it, but the coating had a good texture. I think getting the flour mix right (plain flour plus a bit of baking powder for me ), and leaving it to marinade in the buttermilk mix long enough (I did it overnight) is almost as important from my experiments with both the air fryer and actually deep frying it.

cast iron griddle pan, first practise one was a bit thicker but a lot less fluffy and waffle-like, so on balance those waffle-pancake hybrids were about the best compromise

I had a Yank on my Uni Course (Harvard must have been full, so Coventry had to do) and I remember him saying our bread is weird. It turns out their bread is basically a madeira loaf when it comes to sugar content.

No wonder they all have BMI's higher than their IQ's. Not that we're too far behind these days.

I've got a similar scam going. There's a place on deliveroo near me that sells baccy, all of them are massively increased from shop prices e.g. 45 quid for 50g 25 quid for 30g, except for the 50g gold Virginia light which is being sold for 24 quid, two quid more than the 30g packet. It's cheaper than what you'd pay walking into a shop.

You'd think the first time I ordered theyd have realised their mistake, but nah, I've ordered it about 5 times over the last few months. Even better, a couple of times they'd obviously run out so sent me two pouches of 30g. AND the most recent time, they sent a single 30g one, the driver said "obviously a fuck up their end (he doesn't know how right he is there), just put a request in on the deliveroo website" I audaciously put the complaint in expecting to be told to fuck off or maybe be given a fiver voucher and they refunded all my fucking money :lol:

I got a Pot Noodle selection box for Christmas. I only really eat the green ones (chicken and mushroom) nowadays and even then it’s like once every six months. Just had a curry one though and it was banging. :nod:

I remember Bombay bad boy being too much for me as a child so I’m looking forward to facing my fears and hopefully liking it.

Plenty to try, then. In the meantime I’ve ordered some of the Huel Hot and Savoury stuff for easy working from home food.

The chippy near me (Golden Fish Bar, sometimes referred to as Four Acre Chippy) is no good.
A Chinese near me (Keith's, lol) recently closed.
There's a local social media thing called Nextdoor where local losers discuss pressing matters such as floods and debit cards that have been found. I once got a load of free old Pokemon cards from there. Anyway, rather than offend anyone associated with the Golden Fish Bar I took this opportunity to pretend Keith's was my usual chippy of choice and asked for recommendations on Nextdoor for a replacement chippy:

The steak was decent enough but I'm not convinced it was that much better than a normal one, and certainly not worth the cost uplift. I think it could have done with being thicker but then it'd have had to have been 350-400g which would have been coming in at £35+ :eek:

Don't think I'm up for Guga level spending really.

Wine was decent, which was a pleasant surprise as I often find that older [ish] bottles of French red are generally terrible [no '84 Latours for me]. Edit, '82 apparently.

Best tacos in the entire planet, or at least they were until about five years ago, which is the last time I had the chance to go. You want the carnitas (falda con cuerito being my personal choice) and, surprisingly, the chicken tacos, to which you can add all kinds of toppings.

As for non-touristic stuff, just stick to the touristic stuff. Is not nearly as bad as other cities in terms of number of tourists. The Anthropology museum is ace, as is Teotihuacan obviously. Coyoacan is nice for mooching about / having a beer. If you want coffee and a donut while there, El Jarocho is a classic. Diego Rivera's murals are worth checking imo. Frida Kahlo's museum, on the other hand, is overrated as fuck. The nice bars are in La Condesa. San Angel is nice too (San Angel Inn is a nice restaurant). No idea about clubs.

You can also scout Arroyo (https://en.wikipedia.org/wiki/Restaurante_Arroyo), which is one of the favorites for the next TTH meet.

I have an actifry and my takeaways are
1. Use cheap baking potatoes, rather than fancy small potatoes
2. Cut them pretty thin
3. 27 minutes or so
4. Good quality salt helps

I’ve tried using paprika and all sorts on them, and I’ve also tried sweet potato but I prefer normal potato fries. I also leave the skin on.

Takes a bit of try and find out as you can imagine.

You need to get the starch out of the potato. Soak them for an hour regularly changing water, or rinse continuously in a colander for 15 mins.

Par boiling them would be a good move too.

Disclaimer: I don't actually do any of this because I can't be arsed, but it's the secret to quality roast potatoes, so I imagine it will carry over well.

I really don't earn that much (about £45k a year including locums). Really good restaurants every now and again is just what I like to spend it on. I don't spend much on really anything else.

Honestly I think that improves it in my head. I absolutely wouldn’t, but I appreciate the passion and interest. Bet it was a cracking experience for you.

Are you even based down that way, or was it a journey too?

To add some flavour to the discussion - do you have a bucket list of posh restaurants across the country you’re working through?
