    Sirloin every time. Scorn all you like, but Lidl's 30-day aged steaks are absolutely excellent, especially if you spend a few mins hunting through them all to find the most marbled ones. Season them simply, fry on both sides for a couple of mins, butter in for a minute or so + garlic and herbs. Rest and voila.

    Fat has flavour so fillet is definitely the blandest. It's good as part of a dish where other things make up for the lack of flavour - that's where it's texture shines - but I'd never order one just as a steak.

    One of the top five meals of my life was a 'Steak fromage' (to rhyme with 'page') in New York, massive fucking thing for about $40, smothered in blue cheese sauce. The taste sensation as you were brutally attacked by the blue cheese before it gradually melted away into the marbled, seasoned steak, my goodness, I'm having palpitations just thinking about it.

    Must have skipped breakfast the next day.

    I had a wagyu steak at a Michelin place in Amsterdam for my 40th and it was outrageous. If you ever get the chance to tackle what is basically "peak steak" then give it a try

    Fillet isn't generally more expensive these days I don't think, maybe slightly by weight, but probably not by edible mass.

    I bought a wagyu steak (Australian because the Japanese ones were double the price) from my butcher last year and it was incredible.

    I can't imagine what a Japanese wagyu cooked at a Michelin place would be like.

    I'm sure Wagyu meant something at some point but now it's just a buzz word that implies quality but doesn't guarantee it. Like when all the fancy furger places slapped an Angus tag on things.

    Wagyu comes from specific breeds of cow.

    In the UK Japanese Wagyu has protected destination of origin status and there is an assurance scheme for British Wagyu.

    Also Luca, if you are in London at some point and can get a table (they often have late night tables at short notice), just get yourself to fucking Core.

    Normally when I go somewhere amazing, my mind is "that was brilliant, where next?" but with Core I am genuinely tempted to go back. It was outstanding.

    Went to Store at Stoke Mill the other day which was great.

    I think I have sold the wife on Ynyshir for next year's big one.

    There's a weird category of person who needs to see all their food on one plate instead of consecutively. Went for tapas with my brother and he almost had a full toddler tantrum even though we had way more food than you'd get in a normal main course.

    I always assume 'off menu' is five day old stuff they haven't bothered to throw away yet. Which in the case of prawns in chile sauce (Paraguay sauce?) doesn't sound the one.

    I pass no judgment on the food, which I'm sure is exceptionally good, and whilst I personally think it's an odd stag do idea, I would agree those sort of things are better experienced as part of a group.

    I'm also old and cynical and got over my tasting menu phase 15 years ago.

    Taking pictures of pints also obviously worse and frankly borderline deranged.

    You can get an incredible meal for like $1 in Mexico. Not sure why anyone bothers with that kind of stuff. None of it looks appetizing to me, but I am sure that it is good. I'll still take the $1 tacos from the stand outside, uncultured swine that I am.

    We did both, and they were both enjoyable in their own way. The stand near our AirBnB had banging tacos de moronga.

    It was an ‘odd’ stag do by classic standards - we went museum hopping, did a food tour, did tasting menus. But then again we also got blackout drunk and did the LADS boat cruise. It was a good balance.

    ‘Off menu’ is usually a) stuff they’ve got in as a bonus from the supplier; b) stuff they are trialing for the main menu. This case I think it was b).

    I sort of get the antipathy on the photos (especially the cunts standing on chairs with a DSLR), but food is an experience like any other and I one that I like to remember.

    In other news, I made a lemon tart recently. The first pastry case had a crack somewhere and the filling leaked out all over the oven, so I had to remake it. The second time I forgot to put the sugar in the filling so I had to scoop it all out and remake it again (fortunately only the filling as the case survived).

    I am patissiere.
