Can you tell the difference when you eat at fancy sushi restaurants?
Can you tell the difference when you eat at fancy sushi restaurants?
To be honest I've never been to anywhere which I think would be classed as a "fancy" sushi restaurant. You can definitely tell the difference between decent/good sushi and supermarket crap.
@Luca
Got a table here:

for the wife's birthday (took me fucking ages)
Sushi was far from disastrous but I can definitely see why it takes a million years to become a respected sushi chef. It is quite tricky.

Can anyone tell me how to go from potatoes to amazing chips via an air fryer please?

The perils of posting directly after Luca.
Reading Luca's post, my assumptions are that Pujol is a platinum-selling salsa artist, and Quintonil and Contramar are both very expensive legal highs.
I thought he was paying South American footballers to attend.

Best tacos in the entire planet, or at least they were until about five years ago, which is the last time I had the chance to go. You want the carnitas (falda con cuerito being my personal choice) and, surprisingly, the chicken tacos, to which you can add all kinds of toppings.
As for non-touristic stuff, just stick to the touristic stuff. Is not nearly as bad as other cities in terms of number of tourists. The Anthropology museum is ace, as is Teotihuacan obviously. Coyoacan is nice for mooching about / having a beer. If you want coffee and a donut while there, El Jarocho is a classic. Diego Rivera's murals are worth checking imo. Frida Kahlo's museum, on the other hand, is overrated as fuck. The nice bars are in La Condesa. San Angel is nice too (San Angel Inn is a nice restaurant). No idea about clubs.
You can also scout Arroyo, which is one of the favorites for the next TTH meet.

Man said bachelor party, he wants a 14 year-old Venezuelan in a Guadalajaran whorehouse, fam, not an anthropology musuem and a donut.
I have an actifry and my takeaways are
1. Use cheap baking potatoes, rather than fancy small potatoes
2. Cut them pretty thin
3. 27 minutes or so
4. Good quality salt helps
I’ve tried using paprika and all sorts on them, and I’ve also tried sweet potato but I prefer normal potato fries. I also leave the skin on.
Takes a bit of try and find out as you can imagine.
You need to get the starch out of the potato. Soak them for an hour regularly changing water, or rinse continuously in a colander for 15 mins.
Par boiling them would be a good move too.
Disclaimer: I don't actually do any of this because I can't be arsed, but it's the secret to quality roast potatoes, so I imagine it will carry over well.
^^ this. Soaking for as long as possible and changing the water several times makes a real difference, as does blanching them for a minute or so. Even better, whack them in the fridge for a few hours after blanching to dry them out even more. After that, minimal amount of oil, plenty of salt > introduce to heat. Can’t go wrong. Been making my own parmentier-style potatoes like this for months now and they always come out crispy and fluffy.
@Pepe
Very helpful. Thank you. Teotihuacan is on the list for sure, but great shout on the anthropology museum.
Gone for an adult tea I can sort you all the cooking instructions, mac and cheese with sausages and cajun chicken
Problem. I cant find any shop front that sells Sports Biscuits consistently.
I’ve not seen them for years but looks like you can order them online.
Never heard of them but they look very like malted milk.
@Luca
Core was incredible. Every single little thing was just absolutely flawless.

Y'know, it's really hard to get behind the underfunded NHS when you're ordering 11 courses like that. Looks great, mind.
Getting your food on a tree. Wish it had gone like The Menu.
One of those photos is of Toffifee next to a giant toad dick.

I had a banoffee pie at Miller and Carter the other day and it was the best dessert I've had in a long time.
It all looks excellent, the lamb especially. Favourite dish?

Some of those are completely pulling the piss.
I don’t think I’d ever want to eat any of those. Maybe the tart.
Should’ve just gone to five guys.
Or Portillo's. Really treat yourself.
There’s lamb and a sauce, and there’s lamb and a sauce.
I'd happily scoff any of that down. Looks grand, RL.
I'm going to take a stab at £150 a head without any sort of beverage.
It was £225 a head.

Extra £135 if he went for wine.
I had no idea what it was, lol at that.
I've suddenly lost all sympathy for RL's cries to be paid more.
Kudos to you if that’s what you want to spend your money on (indeed have enough money to spend it on that) but I’ll double down on my should’ve just gone to five guys.
I really don't earn that much (about £45k a year including locums). Really good restaurants every now and again is just what I like to spend it on. I don't spend much on really anything else.
225 quid is my monthly budget for alcohol and cigarettes.
Well there you go.
Honestly I think that improves it in my head. I absolutely wouldn’t, but I appreciate the passion and interest. Bet it was a cracking experience for you.
Are you even based down that way, or was it a journey too?
To add some flavour to the discussion - do you have a bucket list of posh restaurants across the country you’re working through?
Well, apart from the knives and the pepper grinders.
And some sort of boy racer wagon.
