Did Bindhi Gosht (lamb and okra curry) tonight, was pretty good. The okra turned out pretty much perfect but the lamb was a bit disappointing. How do you make it not super chewy? Cooked it for fucking ages.

Every time I try coffee it just feels like a waste of time, despite it smelling amazing and being a good additional flavour in other things. I'm sick of workplace twats banging on about it too.

"Oh man I'm so tired, I haven't had enough coffee today."

No, what you have is a reliance on caffeine or not enough sleep. Fuck off.

We were talking about this the other day. I wouldn't say coffee noticeably perks me up, certainly not to the extent that I couldn't function without it.

I'll have one in the morning and then that's me really, maybe the odd extra one at the weekend or if we're out after a meal but I don't get the addiction side of it.

I get the aaaaaah buzz off it on the first mouthful, the same as that sweet drag on the first fag of the morning used to, but it doesn't make me any more awake.

It doesn't wake me up unless I've had a shit night or need to get up early, though that may be the placebo effect.

Real men drink whatever the fuck they want and dont givva fuck about anyone else Magic. I drink coffee but can easily slurp down a Chai latte if it's offered to me, it's quite nice once in a while.

Well except for Kopparbergs, Baileys and shit like that.
There's no excuse for drinking that at all, admittedly for anyone.

Baileys is alright for certain things or occasions.

Kopparberg is sugary pish though. It's basically just an alcopop.

Brisket, mini jacket potatoes with garlic butter and root veg mash for dinner tonight.

Not sure what to do for a sauce. Thinking something red wine based but might just lump for gravy.

One of the cleaning ladies gifted me a tamal after I asked her where she got them from (turns out she cooked them herself.) It was delicious.

Now I want to go back home.

Outside of the weather, Phoenix's best quality is that there is almost always a colleague whose abuelita has a side business selling bags of tamales once a month. But I do miss the Mississippi version.

Pancakes with mince beef inside, bread-crumbed and then frozen.

For poor people to feed kids, they're horrible.

I've only ever been given the beef ones once at a friends house.

    They were foul.

They do sound a bit grim, as kids I don't think we were ever subjected to anything lower on the scale than chicken kievs which probably weren't much better. Do things like Vienetta and arctic roll still exist? Arctic roll was really weird, a very real danger of wet cake with every bite.

I'm on board with the armpits for the record, probably after dinner though.

Chicken crispy pancakes are boss but obviously the nature of them is such that if you make them you can put pretty much whatever you want in.

The beef ones are wank, but the chicken and bacon ones work. In fact, I don't think I've ever had anything chicken and bacon-based (or chicken and ham) that was crap.

In Poland they do krokiety which is effectively hand made, fresh crispy pancakes.

Whilst it looks like cat food inside they're seriously delicious.

Meat, mushrooms and cabbage are the main varieties.
