The low and slow thing is also called a reverse sear.

J Kenji Lopez says it's the best way:

If your meat thermometer is fucked though :\

Whenever I've done a rib in steak I've just cooked it in a pan and then in the oven though.

You'll have to give that thing some bananas at some point, if he's saying 3 hours for 800g (in his pro oven) then it'll take about three days for Godzilla you have there and still be raw in the middle (although some people seem to like it that way).

I don't think my oven can get down to a low enough temperature to actually follow his guidance, so it'll probably be in at minimum fan 80 (maybe non fan 80). I have a new probe thermometer though so I think I'll just stick it in at about 10.30 and wait until the probe says it's done.

    Call that a steak?!?!?

    Toggle Spoiler

Worked out alright. Think the oven was a bit high so even though it took about 4 hours to hit 52 degrees it probably got there a bit quick, and searing something that big is a bit tricky even in a big pan (I didn;t think it would fit in a grill pan but in hindsight it may have). Also Kerridge's "it's slow cooked so don't bother resting it" line was a crock of shit but hey-ho, it was still nice. *blood alert for Jimmy*

Slurry potatoes were probably a best effort yet as well, although no pics of them.

Accidentally opened a can of condensed milk instead of the caramel version this morning. Is it used for anything else or is it just for the bin now?

Use it to make a Borracho style coffee - espresso, condensed milk, some sort of liqueur/liquor (43 if you have it but I'm sure you could stick most things in there).

It'll keep for weeks in the fridge. Add it to coffee/tea, drizzle it on some fruit...actually, mix it with some dried coconut and bake it for macaroons

I do like pigs in blankets, but as with all this stuff, if they were as great as everyone makes out we wouldn't just have them at Christmas. It's not as if you can only get sausages and bacon at Christmas.

It's a nicer alternative to Baileys.

Coole Swan is a unique blend of single malt Irish whiskey, Belgian white chocolate and fresh dairy cream.

The gravy won't be. They do Gravynaise as a dip and I think it's in some of the burgers too. It's terrible.

    KFC gravy is the one.

Used to have it on my Christmas dinner but for some reason the tradition has died off.

KFC Gravy is great as long as it comes thick enough. It's been too watery on occasion.

    But this shit:

Is to be avoided at all costs.

Supermacs have their festive burger out again here. From what I can see it’s a normal burger with some mushrooms added. That ever so festive of vegetables.
