What sort of knife? Like a kitchen one or just one to go around as a hardman?

    Kitchen knife.

That makes more sense. I always wanted to try a really good knife but I probably wouldn't be able to use it right anyway.

The first knife I bought is an entry-level Japanese Gyuto/Chef's knife and cost about £80. It is a billion times better than a crappy knife.

I know that's not cheap, but you can use it for 99% of things you need a knife for in the kitchen so I don't think it's a ridiculous amount. Something like that, a cheap sharpening stone (I use this https://www.amazon.co.uk/Japanese-wh.../dp/B001DT1X9O and will continue to use it even if I buy a very expensive knife) and a bit of time on youtube is all you really need. It makes such a difference to how enjoyable and easy working in the kitchen is.

Well worth it in my opinion.

    I use this knife:

    https://www.amazon.co.uk/ZELITE-INFI...anese+damascus

Got it in the last sale type things (after wanting it for ages) and it's fucking brilliant.

Not bought a whetstone but I really should.

    I have this:

    http://www.knivesforchefs.co.uk/toji...0mm-1979-p.asp

(210mm version of this, not the carving knife I put before)

    and this:

If you want to learn to sharpen, this playlist is excellent Mahow:

Like I said, I could easily have got by with that one Tojiro knife and the sharpening stone for many years. With a bit of practice I can get it screaming sharp and it can be used for almost everything (it's a bit unwieldy for tiny stuff life garlic but perfectly usable; you would wreck the edge on frozen stuff/bones so that's the one thing I'd definitely avoid).

I really think it's a worthwhile investment for anyone who cooks at all to get one decent chef's knife and a whetstone.

I wouldn't want to be sharpening it so probably no point in me ever buying one. Are there any made from something that would stay sharp?

Ceramic knives are shit (although it gives me another opportunity to post my favourite video ever).

I don't think there's really such thing as a good knife which doesn't need sharpening, or everyone would be using them.

What do you mean by basic knife skills? I reckon I'm decent enough with a kitchen knife but now I'm wondering if I'm missing something.

Mostly just simple stuff like this. Learning to use a knife is obviously best done by practising using a knife rather than sitting on youtube, but it can be useful.

I've often flirted with the idea of buying a really expensive kitchen knife, but I know I wouldn't look after it properly, so I just stick with my crappy knives and this odd tungsten sharpening device an old Australian dude made for me, which sharpens anything to within usable parameters. Realistically they're vanity items for the most part. ONE CLEAN CUT!

I was in the York Outlet a few months ago looking at (obviously just looking at) an eight-hundred set of four knives, and the woman, who was either dying of boredom or thought I was one of those people with so much money they can afford to bowl around like a tramp, let me have a go cutting some stuff with them. They were very good at cutting the stuff, but unless you were literally wearing them out every day I think you would be better off just buying cheap ones and chucking them away when they turn shit.

The problem with shit knives is they don't hold an edge. You can sharpen pretty much any old crap until you can shave with it, but it will be blunt again very quickly.

Good knives take a very sharp edge and hold it well. But I agree, once you are comparing a £100 knife to a £500 to a £3000 knife you are not getting something which cuts 5x/30x better. There are definite but relatively modest improvements but yeah it's a vanity project. Probably like with anything really - you see a big improvement from 'cheap' to 'expensive' and then small improvements once you start going onto 'very expensive'.

I don't care though, I like nice knives and I feel like I've earned the right to blow a tonne of money on something unnecessary - just because I want it - after having no money since forever and everything I've been through the last few years.

    Probably fucking fail now.

    EDIT: e.g.

I bought one of those YI home cameras. They are brilliant. Easy to install as it just sticks to any surface. Links quick to your wi-fi and phone via the app.
You can subscirbe to the cloud storage. You get a free one-month trial, or you can juat use memory card which I'm doing now. Motion activated with an altert direct to your phone.

I would highly recommend them. I bought one and then bought two more on Amazon 30 minutes after I instaled it.

I've one of those too. Great job, I've got it pointing at the driveway from the top bedroom. That's how I caught the neighbours using my bins

The Yi Dashcam is excellent too for anyone looking one. Saved me the other day.

Special offer on Amazon for £30. I have the dome one too ive just setup which is probably too much. You can control it from the app and actually move the camera. Not necessary for my requirements but still pretty cool. It even has a mic you can talk through and catch people off-guard.

Im setting one up over my bed in plain sight. Make my own blue movie.

Aren’t those cameras ridiculously easy to hack? There was a couple on Watchdog who’s camera had been viewed by thousands Eastern Europeans.

Yeah. Amazon is excellent with returns. They will probably let you keep the item and just refund you immediately. (Depends on the item of course)

Bought wireless earbuds (Jaybird X3) for the Mrs but ordered the wrong set and going by the reviews they're absolutely shit. Want to order a different set and just send these back as soon as they arrive in the post.

Absolutely, if it's not very expensive they may not even bother asking for it back, we frequently don't because it's not worth the carriage.

They were £90 so I'd say they will, but that's grand so long as they can go back. There's another set at fairly similar money that has much better reviews.
