Just got back from a tart making course with the (Quite Excellent) Tim Kinnaird of Masterchef fame, who now owns a cake shop and cookery school in Norwich.

The cases were baked differently for the big lemon tart and the little chocolate tartlets. Couldn't really do that for the chocolate ones, and unless you shove a camera two inches away it doesn't really show.

I dunno why you have to be such git about it though :(

They are different. Custard is made with only eggs, creme patissiere has flour (or another source of starch) in it.

Can't remember if I posted about it on old TTH but I bought some sea bass fillets off the discount shelf recently and with the first one just griddled it and then stuck it in a crusty batch with halloumi and chips. It was ace. Similar again with the other one tonight but with some slices of potato par-boiled then grilled, then the fish (griddled again) and lots of salt and vinegar.

Feels like it should be a waste of a nice bit of fish but it's really easy and really good.

The Asda finest pizzas are great though, easily the nicest supermarket ones I've had. All you cunts should try the stonebaked herb chicken one, it is fucking mega.

I made a satay sauce last night to go with chicken and rice. Somewhere along the road I must have not added some sort of thinning out agent, because it was the thickest, richest sauce I have ever made (and I'm a bit of a sauce fiend (wahey! (lads))). Bloody nice though.

Them ponce pizzas supermarkets do annoy me, with their stupid crusts and blobs of tasteless mozzarella that don't serve any purpose. The create your own ones Asda do are the best shop pizzas around, and probably the best value pizzas in the entire universe.

In fact, apart from when you get heavily-discounted bread before the shop shuts, they might be the best value food generally. It's three fifty for a fourteen inch pizza with whatever you want on it. You can pay three fifty for a shit pasty in train stations (as David Cameron lied about doing). I'm getting emotional thinking about it.

It's normally little chicken cubes (tastes kind of like tandoori chicken) with herbs, little cucumber bits all served in a little flatbread/pancake type thing. Glorious.

I'm fairly unadventurous when it comes to Indian food. I like it but don't have it that often so I usually don't want to try something new that I might not like. I usually just go for a madras.

Some sort of buffet would be good so I could go and try loads of stuff but they seem to be far less common for Indian food than Chinese.

I had a south indian garlic chili the other week actually. It was proper shit, but I think I just got it from a rubbish place. Lamb jalfrezi is my usual selection, or anything lamb that is hot but not vindaloo hot.

Paratha or puri are my favourite breads, but nowt wrong with a naan either.

My favourite curry to make is an amazing Kashmiri Lamb dish, which roughly equates to a Lamb Rogan Josh.

It's kind of got two layers of spicing to it - a hit of whole spices which sit in the background, particularly black cardamom, and then a variety of typical dry spices on top, mainly Kashmiri chilli powder.

The base of the sauce is an onion, ginger and garlic paste, as well as a tomato paste I make and then yoghurt as well. The most important thing though is a proper, homemade lamb stock that MUST have all the bone marrow, etc, in it to make it gloopy and gelatinous.

I make it with lamb shoulder usually and give the bones a good bash to crack them open and then boil the hell out of them with a load of veg. Sometimes chuck some cracked chicken bones in the stock too.

Got a mega Jalfrezi recipe stored away somewhere that's made with loads of fresh seeds - mainly fenugreek and black onion/nigella, while the sauce is mainly tomato with loads of chunky peppers cut in it and lots of lemon juice at the end.

tl;dr - I've spent the last 15 years cooking curries from scratch and it's pretty much one of my favourite hobbies. Anyone who's ever thought about dabbling in curry making more seriously, get this book:

Got a slow cooker a couple of days ago, going to stick a lump of beef in there with some green chillies, salsa and onions to use as a burrito filling. Think it will be good curries too, although the girlfriend doesn't like lamb and chicken isn't particularly good for slow cooking, as it's so lean.

It can work, you just need to keep enough moisture in there. Pork works really well though, have a go with that.

Yeah pork, beef and lamb are good because of the fattyness of the meats. I guess chicken thighs are quite fatty, they could work? Otherwise you're right, you'd just need to keep on top of the moisture, using broth or coconut milk or something I guess.

I've never seen the point of portobello mushroom "burgers" (after all, why not just have a meatburger?) but in trying to find some for lunch I had one there. Two portobello mushrooms bunged in the oven topped with cheddar and salami for about ten minutes then put in a crusty batch.

The problem with baking is that if you fuck it up it's generally quite disastrous. Cooking is a bit more forgiving in that mistakes are often quite salvageable.

EDIT: 'Baking a cake' that tastes sweet and looks like a cake is pretty easy, yeah. In the same way that any idiot can make something recognisable as a 'curry'.

Making a really good cake is difficult (as is making a really good curry).

In Benny's cooking world, I've put my slow cooker to good use, got a chilli to look forward to tonight. Cooked it last night (used Guinness and Chipotle peppers to be extra poncy) and have let it rest for the day, the flavours are going to blow my mind.

There's varying degrees of it. I prefer the totally smooth one personally but the one you will normally see on a resraurant menu here is full of grains, as is the main brand that the tourists always go mad for. Very hard to find one with proper blood in it these days too.

The one you want is Rudd's if you see it anywhere.

You can do both. Blended chestnut soup with a load of potato, carrot, some broad beans, and strips of beef thrown in is great. My aunt does it at Christmas every year, though being a vegetarian she omits the beef in her own pot, and it's always superb.

I made custard once (for a large tart) and it is probably the greatest thing I have ever made.

After filling the pastry I sat in front of about 10 people at our house just eating the leftovers right from the pan. They probably all thought I was a cunt for not even letting them try but they'd have had to kill me to get to it.

I sometimes even buy those cold custard pots and eat them.

It was a large serving, so my wife took the leftovers to work for her and her assistant and they both enjoyed it so much that a new batch has been demanded of me.
