cheers. I was trying to acquire the ingredients for this korean recipe the other day, and i had to use about 8 different websites, it came to about 30 quid and half the stuff was sold out. got annoyed and made a curry instead.

I'm having beef in black pepper sauce and rice tonight along with a bag of deep fried chicken balls from the Chinese. I had the same thing last night. I feel like a right fat bastard.

In all honesty, deep fried chicken balls are probably the most un-Chinese thing I've ever heard of.

Went there today.

Tried the Korean Fried Chicken, Mandoo (dumplings), kimchi and for the table BBQ we had mixed mushrooms, belly pork, rib galbi and boolgogi with some fried noodles.

It was stunning and everything I hoped a Korean BBQ place would be. The KFC was a bit shit but everything else was brilliant, especially the rib galbi and boolgogi.

Only bad thing is that the kimchi was so good that I wont be able to eat the stuff I usually get as it's so much inferior. It had the perfect level of sourness from the fermentation and had the right amount of spice.

Love Korean food. Gochujang :drool:

In all honesty, deep fried chicken balls are probably the most un-Chinese thing I've ever heard of.

They're a staple though and the best thing in it. About the only main that isn't full of raw vegetables and a watery sauce.

God yeah I forgot about all the salt and chilli stuff too that's arrived over the last few years. A spice bag is probably the best seller from any Chinese takeaway over here (not sure on naming there but it's salt and chilli chicken, chicken balls, and chips mixed together).

You get variations on what i said above too. Sometimes no chicken balls or sometimes shredded beef instead of chicken. Normally red chillies and onions in the mix too.

Here tonight and despite the fairly shoddy website it was quite good.

The service wasn't the best though, I got a chicken Royal Bangalore having asked for a lamb one. It was tasty though so I didn't care too much.

Turkish tomorrow and then Japanese on Monday.

I'd say that there's a lot less hatred with the newer generations but I'd say that there is more hatred with the Greek Cypriots purely because the Turks are still in the north and many see that as them in 'our houses illegally'.

Personally I don't think that anything can really change, they've occupied the North for far too long now and it would be such a clusterfuck to sort out.

I went to a pub a few months ago that had them stacked from big to small in a fucking mini frying pan. The one at the bottom must've been about 2 inches tall, it was fucking revolting.

Went here today.

Tried won ton fried dumplings, tempura oysters, a duck sushi thing, raw prawns, raw tuna, raw octopus, raw surf clam, garlic fried rice and sizzling steak.

Was really tasty but a bit expensive and small servings.

I made kofta balls tonight. Mushed chickpeas, flour, cornflour, bicarb of soda, various spices, oil and some other shit i've probably forgotten, in the oven for 20 minutes. Was alright. Had it with a cauliflower and tomato curry, which was also decent.

ALSO, got some more plantain crisps. I don't like non-potato crisps generally (the co-op's sweet potato and parsnip (or some shit) offerings were fucking gross), but these are amazing.

Okay, my first curry went as follows:

Naturally, I went with some store-bought sauce because I don't like storing the excess. Ragman Joshi or some shit. Turned out alright, although taking 30 minutes to do it seems a little excessive. It went well with the diced beef I'd bought. Took 5 minutes to seal the meat and then bundled it with the sauce.

The rice was mayhem. Soaked it in some water to begin with to take some of the starch off and then sieved it. Then I added some water and slapped it into a pan for 15 minutes. Thing is, I brought it to the boil and couldn't bring it back down to simmer. Tried starting another one at a lower temperature and that still brought it back to the boil. So I ended up nursing it on and off the hob. Faff. Didn't get all the starch out of it as some did stick together. Shame but at least I got the portion size right.

Made a nice change from the usual stuff. The jar of stuff can do one with its "Use immediately once opened." nonsense. It serves four.

Depends on the rice, but the way that tends to work for most is bring it to a boil, put the lid on and put it right down to the lowest heat. The steam will cook it.

Or you can get easy cook where you just boil it uncovered for 15 minutes or whatever.

I get boil in the bag when i'm feeling really, spectacularly lazy. Which is usually the case.

What sort of hob do you have? When you turn it down the heat will change instantly.

I just boil rice like pasta.

Loads of rice, roughly 10-12 minutes (when it's just right) and then drain it.

Starchy rices like basmati will get a rinse before but stuff like long grain will go straight in.

In which case take it off the heat entirely and let it sit in the pan for a little, the residual heat will take care of the last bit of water.

By first curry do you mean first time you opened a pre-bought jar and added it to meat? Not sure that counts as your first curry.

There's not too much to making one from scratch if you have the stuff to do it. Having all the stuff is a pain in the hole though so if you like the jar then it's a happy win.

I could never get any cooking in when I lived with my folks. When I moved out, rice wasn't on my radar. I mainly stuck with pasta, egg dishes and pizza.

On the hob it really helps to have a glass lid for your pan, and preferably a large diameter pan, so it can cook evenly and you can see when the water is gone.

Varying degrees of difficulty for different rices though. Sushi rice, for example, is not easy if you want it to be good.

You literally wash it and put it in a pan.

The faff at the end isn't required for just making decent sticky rice. Even if you ARE doing that, I'm sure a fan and a bowl (I really don't think it being bamboo is going to make much of a difference....) won't be too hard for most people to come by.

I may try and finish just so it gives me some earning potential. The idea being that that would allow me to fund starting a chocolate business on the side before moving into it full time in the future, I'm not entirely sure yet. I have a meeting with someone from the med school on Friday to discuss my options.

I think really I know that this is what I want to do in the long-term, I'm just trying to work out the best way of going about it.

Got given Rick Stein's Venice to Istanbul book for my birthday, made a couple of things so far and both superb. Not many things in the book I don't fancy the look of, actually.

Cılbır, basically poached eggs in yoghurt, is a fucking revelation, and shallot stifado makes you wonder why they ever bother with beef. The shallots are always the best bit anyway.

2(Two) British/Irish beef patties, bacon, cheese, coleslaw, ketchup, mustard, lettuce and pickles all jammed into a tiny pretzel bun which is too small to hold the contents and as such everything slips all over the place. The consistency is that of wetness, zero flavour to the patties, limp, fatty horrible bacon. Pickles ga-fucking-lore, and coleslaw which has the overriding taste of egg. I can still taste egg an hour later. Egg egg egg egg if you love eggs buy this.

I'd have pretty much any cut of steak over fillet. It's tender but the lack of fat means that it's bland compared to a ribeye or sirloin.

The appeal of hello fresh is more that you get the right amount of ingredients so you don't end up wasting stuff (like when you buy a whole bunch of coriander but only need a bit and it just ends up sitting in the fridge til it gets chucked).

You still have to cook it.

We had it for a while but stopped it I think because of the cost.

The bqq sauce is fire from aldi. Easily the best bbq sauce ive ever tasted. Ive going back to see if they have anymore. Looking to scrape up all the remainders, not sure if they have a long date on them until they are out-dated.

I went to the Fish People Cafe in Glasgow yesterday and it was absolutely superb. Had a fish stew that had mussels and clams and stuff through it. Also tried oysters for the first time because they sold them individually. They look fucking vile as I'm sure everybody knows but other than an odd texture I quite liked them.
