Getting a long awaited cod and chips which I've been hankering for for a long time. The grease and shit willleave me having a meltdown no doubt but needs must :drool:

My question is, would replacing their curry sauce with homebrewed Bisto gravy be fucking mental? Has such an act ever taken place in the history of humanity?

It depends if you are keeping the fish isolated from the gravy. Chips and gravy is top tier foodery, but fish and gravy would be an abomination.

You can get away with fish and chip shop gravy, because it's (or it should be) too thick to soak into the batter. Thin roast dinner gravy would get into it and turn everything to mush.

Both very valid points and I'm in agreeance. I'll either try make it thicker at home (can you get that consistency with this Bisto shit?) or just use it as a dipping sauce and report back.

I love the thought of fish and chips but then it becomes a pretty big grease mess after a while. I think pie, mushy peas and chips or pie, chips and gravy are the stronger combination.

I'll reserve judgment on the Canadians, but I have serious doubts about you ever having had decent fish and chips in Australia. They generally miss the point of the chips being the arbiter of true quality, not the fish.

And I didn't mean to say eating them quickly was wrong, just that's what you naturally do, and then you get the glutton's remorse when you've just nailed a half pound of oil in 5 minutes. I guess the same would apply to fried chicken.

Giggles is right though, when you arrive at the chippy can have as much of an impact as anything in terms of whether they'll be any good.

The vindaloo was banging (as was the pilau rice I made) although I used hotter chilli powder than I usually do so it was a bit spicier than normal.

I had a rainbow trout fillet tonight because it was on offer in Morrisons. Coated it in flour with salt, pepper, paprika and some other stuff and fried it up. Pretty tasty and luckily it was a big fillet because they'd left a whole line of bones near one edge that proved to be a total pain in the dick to take it so I just trimmed that bit of it off.

Learn how to use the honing steel on YouTube (ideally for a quick 30-45s every time before you use the knife, but honestly once every couple of times is fine) - it's pretty easy.

You could honestly then take it to a knife sharpening place like once a year and you'll have a great, sharp edge.

I have Victorinox knives (rosewood handles) and get them sharpened once a year and they keep their edge fine. I use them everyday for all sorts of things.

I could probably look into how to sharpen a knife myself as I have to do my chisels at work every so often and have the stones but genuinely don't see the need for kitchen knives.

We've got one of them too. Used it twice. Once for a sausage casserole, which was grim and once for a chicken, which was still raw inside despite Phillip Schofield assuring us it could cook one in half an hour.

It's sat in the cupboard since.

The chicken one is weird because even if you do get it cooked through, once you make it edible looking with a browning in the oven then you’d have one cooked in the oven in around the same total time anyway. Maybe if it’s frozen then yeah, but I’ve never felt the need to freeze a whole chicken anyway.

Ribs were a good job in it from what I remember, but they had to go in the oven after too anyway.

Great for healthier chips, but also great as a quick reheater.

The cheese isn't really noticeable, they end up tasting a bit like a wholemeal hot cross bun that you've put marmite on. The dough still has that initial hit of sweet, then the bitter saltiness comes through at the end. They also have an odd odour (that could be the cheese).

Picked up this book as Fuschia Dunlop's series on Chinese food are supposed to be excellent.

Going to have a go at making 'Fish-Fragrant Fried Chicken' and 'Red-braised pork' at the weekend.

The only problem I can see is ingredients in some of the recipes are absolutely impossible to get, but then that's not really the books fault. She is good at giving alternatives but I can never help feeling the dish won't be quite what it's meant to be if you do that.

Yeah, I was thinking it's pretty fiery as it is, but I've already blended them up (sans seeds) so they're going in later. Hopefully heat levels won't be off the charts. I figure the lamb fat will temper the sauce a bit (bad luck vegetarians).

I went in with the full amount of ghee.

Excessive butter levels pretty much always take curries to the next level.

Randomly saw a video the other day from some lad who’s trying to become YouTube famous and like his third ever video was ‘eating 20 cheeseburgers in 10 minutes’ with an immediate red flag of it being a seven minute video. The editing was a 9/10, entertainment a solid 8/10 should go far, but my god he was bad at eating McDonald’s cheeseburgers. Think he only got 6 down or something as equally shameful.

Leave to soak for a few minutes then wipe. It's really easy.

I first came across it through my mum cooking Chilli Con Carne (chilli with meat?) and I see it mentioned often in media but what is the requirements for something to be identifiable as chilli? What annoys me is it doesn't seem to even need to be spicy? I was planning on making some bean and spice concoction soon so would be nice to know if I've entered the realm of Chilli or not. I've recently come into possession of some Brunost (https://en.wikipedia.org/wiki/Brunost) and it's quality. A bit like a Kraft single, but sweeter. The Wiki article comparison to milk chocolate has some merit, it coats your mouth in the same way. Not sure I've sold it well there.

Ideally eaten on a cracker with some jam, or simply as a single slice out of the fridge when the feeling takes you.

Went to a good butchers yesterday and stocked up.

Had some precooked beef shortribs yesterday that were delicious and needed about 40 minutes in the oven.

Also got some quality ham and pork pies (best I've ever had) which got polished off for lunch.

And tonight a thick ribeye steak.

I've got some sausages (toulouse and boerewors) and lamb for the weekend.

Chicken breast is shit on its own, but it's flexibility probably gets it off the hook.

The correct answer has to be Turkey Mince. I don't care what sauce you put on it, there's no getting around the disappointment that it isn't beef / lamb.

Went back to the butchers yesterday.

Got some pre-marinated jerk chicken (top quality chicken and the marinade was nice but could have been a bit hotter), thick cut streaky bacon (the difference between this and shop bought is night and day, my word was it good), cumberland sausages (really tasty with a good hint of pepper running through them) plus some more pork pies as well as some peppered salami (not tried).

Think I'll be going once a week from now on, it's expensive but it's worth it for the quality.

I have a Weber Mastertouch, will probably investing in a Kamado joe later in the year. Have been into BBQ/smoking for a while now.

Get some decent charcoal and some wood chunks and there's loads of content on Instagram and YouTube.
