Running out of the free tub of coffee I was given when departing the office for home working back in March. It's a big tub of Douwe Egberts Gold, I went off coffee but am back on it with gusto now. Any recommendations of the best instant coffee about? Or is cafetiere the way forward? Minimal fannying about preferable.

We have a tassimo machine too and I am doing a costco trip soon but they do irritate me a bit with the amount of waste that isn't easily recyclable. Might investigate coffee bags, the science seems sound but the first time I encountered them some absolute fuckwit colleague was using them so I took a dislike to them by proxy.

I think (though I could be wrong) that it is a cultural thing - coffee here is traditionally just an alternative to tea, which is something you drink all day while doing other things and would take 5 minutes to make. In the European cultures I am familiar with, coffee is more of a special thing that you would stop your day and take 10-20 minutes for, and they don't have tea.

Obviously in our more cosmopolitan / metropolitan areas, there is European style coffee in abundance.

Oddly enough there isn't where I live, the wife remarked on this the other day. Don't think there is a chain coffee shop or even a Greggs in town, some wank local ones but even they were closing at a rate of knots pre Covid.

Try Union. It’s stocked in Sainsbury’s, or you can order from them directly. Plenty of variety if you’re looking to try new things.

Don’t buy supermarket beans if you’ve got a good quality machine like that. They’ve probably been sitting around for months since they were roasted.

Yeah I’ve got this too. Had it for 3 years and it’s absolutely excellent. I’m pretty lazy with the coffee beans since I’m always home now though.

Yeah, you can’t argue with the price tbf and it’s a decent cup of coffee. Maybe 3-4 cups of coffee per day and the bag lasts just about a month I’d say. I have it on a monthly subscribe and save and it’s just about right.

I do like to pick up a different bag if I’m in Glasgow and passing a shop but this is a really good regular one.

Pal has one too and uses it very regularly and not heard any complaints.

Good piece of kit - found the chips work best with cheap baking potatoes too, rather than posh potatoes.

They don’t really for (2). They’re just smaller and quicker for smaller items/batches.

You can cook fried tasting chips though if you give them a small spray of oil rather than dipping them in a litre of it. But then again, you don’t end up eating the litre.

Looking into kitchen knives as the set we got for our wedding are nearly ready for the bin, one of them managed to break through it's plastic handle within a week of opening them :moop: now they seem to be at the end of their lifespan, I decided I was happy to spend some money on a decent set. Problem being I thought a decent set for a home kitchen would set me back about £100 but a brief search online suggests the funko pop vape collecting crowd have got their claws into it so I could spend more than that on a single knife.

Anyone got a set they'd recommend that wasn't some custom job forged in the shadow of Mt Fuji by Mr Miyagi's ghost?

I only really know about Japanese style knives. With that qualification, my advice to anyone is buy a decent gyuto, a cheapo paring knife, and a whetstone and learn to sharpen (it's easy enough and quite therapeutic). That will do 99.9% of anything you ever want to do and with home use will last you probably 20 years (the parer will need replacing but they are like £8).

If you wanna know more PM me.

If you don't want to learn to sharpen you're better off going for a German knife and a steel but I don't have much knowledge on that front (happy to do a bit of research for you if you want to go this route). But again, just buy one good chef's knife and 1 smaller knife.

Sets are never good and as you've found are a false economy.

The technique requirement is overstated for all but knives you wouldn't be considering buying unless you know how you need to treat them IMO.

Regardless of that, Luca's suggestion is probably a good bet unless you really are set on trying a Japanese (/Japanese style) knife. The knife i would normally recommend is awkward to get because the site had upped their minimum spend for free shipping which makes the shipping cost pretty prohibitive IMO.

I have Victorinox knives and they're mint, I think they cost £60 each for the bigger knives and then I have a set of smaller cheaper knives also Victorinox.

Zwilling tends to be good quality, but anything that comes in those knife blocks is going to suck, and is going to be in excess of your needs. Get yourself a good 8-inch chef's knife (I've recommended the Victorinox above) and don't bother with the other stuff. Maybe a cheap serrated knife for bread. The block is a waste of time/space/money for knives you're probably never going to use.

So I've got this mother fucker drying out in the fridge at the moment:

It's a c.1.5KG bone in rib and I'm trying to figure out the best way to cook it. There seems to be some divergence. I've got a Tom Kerridge book with a Cote de Boeuf recipe which suggests slow cooking for a fuck off long time (3hrs+ @ 55 degrees) and then flashing it at the end, and I've got the preponderance of internet opinion which seems to want to go the other way - seal then in the oven for a short time (as if it's a massive steak, which, I suppose it sort of is).

I'm sort of leaning towards Kerridge as whenever I've had cote de boeuf out I've always thought the fat needs more time, but the meat can't take it if you want it anything other than crucified. My problem is my cooking thermometer has carked it so the low and slow approach will be a little bit hit and miss, and his timings are for an 800g piece.

What say you TTH?

You'll have to give that thing some bananas at some point, if he's saying 3 hours for 800g (in his pro oven) then it'll take about three days for Godzilla you have there and still be raw in the middle (although some people seem to like it that way).

I don't think my oven can get down to a low enough temperature to actually follow his guidance, so it'll probably be in at minimum fan 80 (maybe non fan 80). I have a new probe thermometer though so I think I'll just stick it in at about 10.30 and wait until the probe says it's done.

Worked out alright. Think the oven was a bit high so even though it took about 4 hours to hit 52 degrees it probably got there a bit quick, and searing something that big is a bit tricky even in a big pan (I didn;t think it would fit in a grill pan but in hindsight it may have). Also Kerridge's "it's slow cooked so don't bother resting it" line was a crock of shit but hey-ho, it was still nice. *blood alert for Jimmy*

Ooof. That is very, very nice. The big dimple must be brilliant for release. Looks like there's some upwards curvature on the tip (oi oi) as well, which probably is pretty forgiving.

I've loved the cleavers so far. Needed some care out of the box (quick sharpen and oil/wax treatment on the handles) but they work like a dream.

I think most people tend to overcook pork based on some misguided, 60s-housewife-tale nonsense that it can't be pink in the middle. This is compounded by the anatomy of chops which, unlike much the rest of the animal, are very very lean. Pork chops can/should be pink in the middle, so cooking them to about medium (140F) will get you a good result. Here's the obligatory Kenji analysis (https://food52.com/blog/18501-j-kenji-lopez-alt-talks-to-himself-about-crown-roast-of-pork-the-king-of-the-holiday-table#:~:text=The%20key%20is%20to%20get,uneven%20y our%20roasting%20will%20be.).

It also helps substantially (but is ultimately not fully necessary) if you brine the chops beforehand.

Actually, as I think about it, you (Spikey) should probably be targeting ~130 (which is where it's still pink in the middle). 140 is also juicy chop but mostly white (which is probably what Giggles had, and can also very good, but makes it easier for the temperature to run away from you into dry territory).

Usually smoked pork chops are brined beforehand as well, which does wonders.
