Seems to have a good reputation, and it’s one of those places where apparently you have to book way in advance, but sometimes I doubt places like this are any better than a random cafe you might go cos it’s raining when you’re on a weekend away in a wanky village in the lakes.

Nothing too fancy, first attempt at roast beef with a less than ideal cut (silverside) but cooked to a perfect medium rare thanks to using a thermapen.

I've one of them in the drawer but I've never used it as it only has a rotary dial on it and probably has a mind of it's own.

Speaking of, I got a 500g boneless rib today on offer for €3.50 and I haven't the foggiest how to cook a lump of that size. Would I be better just cutting it into 2 or 3 steaks?

That would be good (though I'd get a cheaper alternative, as soon as I seen the site I knew it'd be a rob). I think the yoke I have is left in the meat in the oven.

Nah, they're worth the price.

That ribeye looks beast. You could sear it really hard in a really smoking hot pan to give it a crust and then put it in the oven but you'd probably need to use a thermometer to get it cooked right in the middle.

I'd looked up one that said sear it, then 10 mins at 230°C, then 20 mins at 160°C. Might give that a try.

As for my own food, I'm off to a local Italian restaurant to celebrate the pregnancy with the in-laws. I've been there a few times and it's a bit of a mixed bag, but they get the basics right.

The Koreans used to get bento boxes delivered in fairly regularly to the office. We'd take turns putting them in the microwave, box and all, after taking the sellofane wrapping off of course. Proper cheap and nasty, Giggles's one looks far better, but they all have one thing in common which is the tube of soy sauce of a size only otherwise seen for eyedrops and probably anti-venin for snake bites. You need tiny little fingers to be dealing with that.

I'm not in the UK so I'm not sure about the South America or African stuff. We get a fair bit of Mexican here but those two would be extremely rare to non-existent.

I mostly make my own from what I buy in the Mexican supermarket. Also went on their tamale making class but the husks are a bitch to get, always sold out within hours of stock coming in.

This would be my favourite 'eating out' place.

I normally do the supermarket as the butcher's chicken breasts last about 3 hours before they're gone off. I know most of the places that do Super Valu's meat anyway and it's always very good quality.

For anything specialist like briskets, etc I order online from The Premium Butcher and they deliver to work.

I've become really fussy about meat lately, and I'm not really sure why. I used to just buy the cheapest meat available, but after Tesco substituted a Sirloin for a bit of Fillet Steak it seemed to change something in my soul. I can't eat 20% fat mince or any of that muck now.

There is a big difference between meats, you really get what you pay for. I eat a lot less of it than I used to though. When I finally move out into my own place shortly I can see myself eating it only 1-2 times a week but high quality.

That said, the butchers around here must all drive Ferraris and holiday in Barbados with the prices you pay.

Lidl steak is excellent, but it does rely a bit on sifting through all the packs/cuts to find some good fat marbling, the right thickness, etc, and cooking accordingly.

Look at two packs of Lidl sirloin and one will be half a centimetre thick and as wide as a plate. The next will be the size of a phone but an inch thick. Obvs requires completely different cooking/use (the thin one I'd cut into strips and use in a stir fry, the thick one cook like a piece of filet or something like that).

Tbh, a lot of it is in the cooking - Sainsbury's meat has always been fine to me (just picked up a pretty good looking ribeye for a few quid) but if you cook it straight from the fridge, no seasoning and annihilate it, it's going to be shit. I think it was James Martin who really drummed into me the importance of getting meat out a good few hours in advance of cooking so it's room temperature. And let a bit of oxygen get to it too. I tend to take the packet out the fridge 3/4 hours in advance and then cut a good opening in the packet at least an hour in advance.

When it's steak I'd normally put hers on for 6 minutes a side and mine for 1 a side to finish together so they can rest together. I'll be finishing this in the oven and having it with normal dinner though instead of chips.

Grabbed a fillet steak out the co-op and got to work. It managed to look absolutely awful once you take it out the water but after searing for a little over a minute on each side it's soon rectified. Might give it a go with a blow torch next time.

Looks more on the medium end of medium rare (which is fine) and I reckon those machines are probably quite good if you want it to be more cooked, but not over cooked, but if you don't mind (or prefer) it to be more on the rare end of the spectrum then I'm not sure what it adds over just cooking in a pan/on a griddle.

I suppose maybe it would come into its own with a really substantial piece of meat, but then you could always do what Heston said years ago and blow torch the outside and then put it in an oven at 50 degrees for a day. Practical.

You'd just set the temperature to what you want though, whether it's blue or well done.

The whole idea is you can get a consistent result all the way through the thickness of the meat.

Went to Nathan Outlaw's the other night as a celebration of getting engaged. It was seriously good. Simple dishes really but just so beautifully balanced and executed.

Cost was pretty eye-watering as well but yolo init.

Went to Stack & Still last night for the first time and it was pretty decent. I think I'd always go on the Tuesday for the cheapness, though. At full price you're probably getting a lot of stodge and less of the good stuff.
